Cherry Clafoutis

These individual mini desserts are simple to put together and taste like summer! (Serves 6)

Ingredients:

for ramekins:

butter

6 tsp granulated sugar

for Cherry Clafoutis:

10 ounces fresh cherries, rinsed and pitted

½ cup flour

1 tsp baking powder

3 eggs

¼ cup granulated sugar

1 cup half and half

1 tsp vanilla

powdered sugar for dusting (optional)

Instructions:

Grease the inside of each ramekin with butter, then coat them with sugar – making sure the bottom and the sides are well covered.

for cherry clafoutis

Preheat oven to 350°F. Place 6 or 7 cherries in each ramekin -- the number will depend on the size of the cherries. Prepare the batter by combining flour mixed with baking powder, eggs, sugar, half and half and vanilla in the bowl of a stand mixer and blend for 1-2 minutes. Pour the batter over the cherries.

Place the ramekins onto a baking tray and bake for 20 minutes or until an inserted skewer comes out clean. Cool slightly and dust with powdered sugar if desired.
