Chicken + Chorizo Skewers

Ingredients:

¼ cup olive oil

2 garlic cloves, minced

2 tsp dried oregano leaves, crumbled

2 tsp paprika

2 tsp dried thyme

1 tbsp lemon juice

1 tbsp brown sugar

1.5 lbs boneless chicken breast (or thighs), cut into 1 inch pieces

4 chorizo sausages, thinly sliced diagonally

Instructions:

Combine olive oil, garlic, oregano, paprika, thyme, lemon juice and brown sugar in a bowl. Whisk together, pour over chicken, and toss to coat. Place in the refrigerator for 2 hours (or overnight) to marinate. Evenly thread the chicken, alternating with chorizo, among the skewers. Heat a char-grill pan or barbecue on high. Add the skewers and cook, turning, for 6-8 minutes or until chicken is cooked through.
