Lobster Bisque

Easy to prepare and delicious!

Ingredients:
6 Tablespoons butter
1 cup chopped fresh mushrooms
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrot
4 cups chicken or vegetable broth
1 teaspoon Old Bay Seasoning
1 teaspoon salt
1/2 teaspoon cayenne pepper (or more if you like spicy)
3 cups half-and-half
1 cup dry white wine or sherry
1 pound cooked lump lobster meat

Instructions
Melt the butter in a large saucepan over medium-low heat. Add the mushrooms, onion, celery, and carrot. Cook and stir until tender, about 10 minutes. Stir in the broth, and season with salt and cayenne pepper. Bring to a boil, then simmer for 10 minutes.

Pour the vegetable and broth mixture into a blender and process until smooth. Return to the saucepan, and stir in the half-and-half, white wine, and lobster meat. Cook over low heat, stirring frequently until thickened, about 30 minutes.
