Superfoods Salad
This salad is packed with 12 superfoods! This is a great “clean out the refrigerator” salad that is easily customized to include whatever you have on hand.
Ingredients:
2 cups cooked quinoa (see below)
½ cup frozen shelled edamame, defrosted
½ bunch curly kale (about 4 to 5 cups), chopped or torn into bite-sized pieces with thick ribs removed
½ cup fresh blueberries
½ cup red grapes, halved
½ cup dried cherries or cranberries, chopped if necessary
1/3 cup goat or parmesan cheese, crumbled or shredded
¼ cup sunflower seeds
¼ cup pecans or walnuts, chopped
Pomegranate Vinaigrette (see recipe below)
Pomegranate Vinaigrette Ingredients:
½ cup olive oil
½ cup pomegranate juice
½ cup rice vinegar
2 Tablespoons white sugar
1 Tablespoon chopped shallots
¾ teaspoon chopped garlic
½ teaspoon ground white pepper
kosher salt to taste
Pomegranate Vinaigrette Instructions:
Place olive oil, pomegranate juice, rice vinegar, white sugar, shallots, garlic, white pepper, and salt in a blender. Cover and blend until smooth, about 2 minutes. Set aside.
Instructions:
Put quinoa in a very large bowl. Add the kale, blueberries, grapes, dried cherries, cheese, sunflower seeds, pecans, and stir to combine; set aside. Add desired amount of dressing to salad, toss well to combine, and serve immediately.
