Grilled Summer Salad with Citrus Vinaigrette
Ingredients:
1 small eggplant, grilled
1 red pepper, grilled
1 yellow pepper, grilled
1 medium zucchini, grilled
1 small summer squash, grilled
2 ears of corn, grilled
1 cup cherry tomatoes, halved
1/4 cup fresh basil, leaves torn
4 cups baby arugula
For the Citrus Vinaigrette:
1 tablespoon apple cider vinegar
Zest and juice of one lemon
Zest and juice of one lime
1 teaspoon honey
5 tablespoons olive oil
1 teaspoon green onion, sliced
1 teaspoon chopped parsley
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Instructions:
In a medium bowl, whisk together the apple cider vinegar, lemon juice, lime juice, and honey. Gradually whisk in the olive oil, continuously whisking until vinaigrette thickens. Add the green onion, parsley, salt, and pepper, adjusting seasoning as needed. Set aside.
Combine eggplant, red & yellow pepper, zucchini, summer squash, corn, cherry tomatoes, and torn basil leaves. Toss the salad with the citrus vinaigrette, or serve the salad with the dressing on the side.
